Spaghetti Squash Taco Casserole

Guys!  I've created again!  And I'm gonna call this one an awesome winner!!
Technically it should probably be called taco seasoning spaghetti squash lasagna, buuuut that just doesn't roll off the tongue in the same way.  :)

I didn't have much on hand, so I got a little creative and it turned out delicious!
(even the little man loved it!)

1 lb turkey burger
2 1/2 Tbsp taco seasoning
1/4 c water
1 spaghetti squash
1 Tbsp olive oil
1/2 tsp salt
1 14 oz. diced tomatoes with chilies
1 1/4 c. shredded low-fat cheese (I used a mexican blend)

Cooking the spaghetti squash
Preheat oven to 375C.  Cut the spaghetti squash in half.  Mix the olive oil, salt, and 1/2 Tbsp taco seasoning.  Spread the olive oil/taco seasoning over the spaghetti squash. Flip the spaghetti squash face down onto a cookie sheet with foil.  Bake 40-50 min. depending on size of spaghetti squash.
Turkey Burger
Brown turkey burger.  Drain.  Add 2 Tbsp taco seasoning and 1/4 c. water.  Set aside

Puttin' It All Together
Once spaghetti squash is done cooking, allow to cool 5 to 10 min.  Scrape out squash into a large mixing bowl.  Add cooked turkey burger, 1 c. cheese, can tomatoes (drained).  Mix well.  Dish into an 8x8 pan.  Bake 25 min @ 375C.  Remove and sprinkle ~ 1/4 C. cheese on top.  Broil for 2-3 min.  Aaaaand voila!

Makes about 4 lean and green servings
