Stir Fry with Cauliflower Rice

I'm no pro when it comes to Asian food, but I was happy with it.  It was pretty good and pretty dang easy.  You are free to switch things up a bit more if you'd like to make it better.  Comment if you have any better recommendations!  :)

Ingredients
1/4 cup Soy sauce
1/2 cup Chicken broth
1 head of Broccoli
1/2 bag of String green beans (costco size...I love Costco! haha :) Sorry, I didn't measure exactly.
2 Tbsp. red wine vinegar (that's all I had on hand...I'm thinking sesame seed may be better)
1 Tbsp. Olive oil
1 Tbsp. Minced garlic
1 tsp. Ginger (I used powder)
3 packets of Stevia in the Raw
Salt & Pepper to taste
1-1.5 lb Beef or Chicken (sliced in small stir fry strips)
Large bag of cauliflower florets or head of cauliflower

Directions
Blend the cauliflower to tiny pieces...voila! cauliflower rice!  Put it into a microwaveable bowl and cover with plastic wrap.  Microwave for 5 min.  Stir.  Microwave another 5 min.  Stir.  Let sit for 5 min.  Check how tender the cauliflower is.  If needed microwave an additional 5 min.

Meanwhile...
Mix soy sauce, chicken broth, vinegar, olive oil, ginger, and garlic together.  Cook chicken or beef on simmer in half of the sauce.  If you are doing beef, make sure not to overcook or you'll have some tough beef stir fry.  Add the remainder of the sauce with the broccoli and green beans. I cooked the veggies separately since they have a different cooking time than the meat.

There you have it... Stir Fry with Cauliflower Rice.  I ended up needing to add a little salt on top.  I wouldn't call it perfect, I'll probably tweak it in the future to make it better.  I'd call it a good start for a first go!

(This ended up giving me about 3-4 lean and green meals.  You'll probably needed to do more meat to make it enough lean depending on whether you are doing chicken or beef...)
